The new tasting menu is inspired by the ocean, structured into four chapters - Sunlight, Twilight, Midnight, and Seaweed & Salt - each representing a different depth and stage of Balbi’s culinary journey. Signature dishes include Tomato Tart with Caviar, Ama Ebi Tartare with Kristal Cavia and the beloved Squid Caldoso Rice — a comforting homage to Chef Balbi's grandmother featuring local Yi-O rice, chorizo and delicately sliced squid. While the menu emphasizes seafood, with meat removed from the main offering, dishes like the premium Kagoshima Nozaki Wagyu is available as an alternative.
